Mussel soup with wheat beer and star anise

A light, yet savory mussel soup with star anise and wheat beer. Based on mussel broth and milk it makes a great froth if whipped up with an immersion blender or even a whisk.
The star anise gives a light hint of liquorice while the beer and sumac balances the dish with freshness and acidity.

sumac, marjoram and rye grissini

Serves 4

1 kg of mussels
3 shallots or 1/2 onion
1 stalk of celery
A small piece of fennel
A small carrot
1 bay leaf
2 cloves of garlic
1 knob of butter
1 litre of milk
1 star anise
One bottle of good Wheat Beer (Weissbier) You need 200 ml for this recipe (No, I don´t know what you should do with the rest…maybe bake a beer bread, or just drink it!)

Clean the mussels by rinsing them under cold water, scrubbing them and removing the “beard”. Make sure to throw away any mussels that are open (and won´t close if you tap them hard), broken or damaged in any way.

Start by chopping all the vegetables except the garlic into small pieces, really small pieces.
Peel the garlic cloves and lightly crush them. Put the vegetables in a pan together with the knob of butter, the bay leaf, the sprig of marjoram and the garlic. Cook over medium-low heat for a couple of minutes until soft but not brown. Add the mussels. Add 200 ml of water, cover and bring to a boil. Reduce heat and simmer until the mussels have opened (about 5-6 minutes). Discard any mussels that remain closed.

Strain the liquid into a saucepan, add the milk and the star anise. Boil gently for about 10 minutes. Remove from heat, discard the star anise and then add the beer. Add salt to taste.

Arrange the mussels in serving bowls, mix the soup with an immersion blender to create a nice froth and then pour it over the mussels. Pick some leaves of marjoram and put them on each plate. Finally sprinkle a small amount of sumac on top.
At my house the soup is served with rye sourdough grissini, but any good bread would work just fine!

Zuppa di cozze alla birra di frumento, anice stellato, sumac, maggiorana e grissini di segale

Una leggera, ma saporita zuppa di cozze con anice stellato e birra di frumento. Il base di brodo di cozze e latte fa una bella spuma quando si frulla con un mixer ad immersione o una frusta.
L´anice stellato da una nota di liquirizia mentre la birra e il sumac equilibra il piatto con i suoi sapori freschi e acidi.

4 porzioni

1 kg di cozze
3 scalogni o mezza cipolla
1 gambo di sedano
Un pezzetto di finocchio
Una piccola carota
1 foglia di alloro
2 spicchi di aglio
1 noce di burro
Un litro di latte
1 anice stellato
Una bottiglia di birra di frumento (Weissbier) Basta 200 ml per questa ricetta (No, non so che devi fare con il resto…magari fare un pane alla birra o semplicemente berla!)

Maggiorana

Per prima cosa lavare le cozze sotto acqua fredda corrente, strofinarle bene ed eliminare per quanto possibile tutte le impurità. Buttare via tutte quelle che sono aperte o rotte.

Tagliare tutte le verdure, tranne l´aglio, a pezzettini. Pelare l´aglio e schiacciarlo leggermente. Mettere le verdure in una pentola insieme a il burro, la foglia d´alloro, un rametto di maggiorana e l´aglio. Mettere sul fuoco basso e far appassire per qualche minuto. Aggiungere le cozze. Aggiungere 200 ml d´acqua, coprire e portare ad ebollizione. Fa bollire lentamente finche non saranno aperte le cozze (circa 5-6 minuti). Buttare via le cozze che non sono aperte.

Filtrare il liquido dentro un´altra pentola, aggiungere il latte e l´anice stellato. Far bollire lentamente per 10 minuti. Spegnere il fuoco, buttare via l´anice stellato e aggiungere la birra e sale quanto basta.

Mettere le cozze in piatti fondi o scodelle, frulla la zuppa col mixer ad immersione per creare una bella spuma e versare nei piatti. Mettere qualche foglia di maggiorana in ogni piatto e spargere sopra il sumac.

A casa mia viene servito con i grissini di segale, ma in generale un buon pane sarebbe un ottimo accompagnamento.
